This is one of my family's favorite winter comfort foods, it's super filling and high in protein! You can tweak this recipe to make it your own, but this is how I make mine, and even my very picky nephew loves it!

Ingredients: This feeds 6-8 people
4 large chicken breasts
Chicken broth (usually takes 32 oz)
1 can cream of chicken soup
1/2 cup cottage cheese
1 can diced green chilis
2 cans cannellini beans
2 cans navy beans
2 cans white northern beans
1/2 block of cream cheese, I used reduced fat
1lb shredded cheese I use the fiesta blend
1 bag frozen corn (optional)
1/2 cup heavy whipping cream
2 tbs Worcestershire Sauce (I personally measure with my heart)
1 small, diced onion. I prefer to just use 2 big tbs of pre-minced onion in a jar.
Spices I use, adjust these however you like:
1 tsp black pepper
2 tsp salt
2 tsp garlic powder
2 tsp onion powder
2 tsp Adobo powder
How to prepare:
In a crock pot add your chicken, diced green chilis, onions, and cream of soup.
Blend your cottage cheese with the heavy whipping cream and Worcestershire sauce, and dump that on top of your chicken.
Drain your beans and add them in, go ahead and add all of your seasonings as well.
Then cover with chicken broth, you want all the beans and chicken completely covered.
At this point you can add your corn, cream cheese, and half the shredded cheese. (Reserve the other half for everyone to top their chili off once it's done.)
Once chicken is cooked, I shred it with a fork and add it back in.
I cook mine on high for 4-6 hrs. This makes the creamiest chicken chili, my family likes to add a dollop of sour cream or plain greek yogurt, tortilla or corn chips, and cheese to theirs as a topping. The nice thing about this recipe is you can tweak it by adding other frozen veggies, or leaving out anything you may not like. The blended cottage cheese just adds more protein, and helps thicken the sauce, you cannot taste it.
This is definitely an easy meal that is on repeat for us in the fall/winter!
